Ingredients
Red Rice
- 1/4 tsp garlic powder
- 1/4 tsp Trader Joe’s onion mix
- 1 tsp sea salt
- 1/4 tsp black pepper
- 1 cup Lotus Food Red Rice
- 2 cups water
Broccoli
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 2 pounds frozen cut broccoli
Toppings
- 1/2 cup cranberries
- 1/2 cup slivered almonds
Garlic-Dijon Vinaigrette
- 1/2 cup olive oil
- 1/3 cup Annie’s Dijon Mustard
- 1/2 lemon
- 1/4 tsp garlic powder
- 1 garlic clove
- 1/4 cup onion
Instructions
To Make Red Rice
- Mix all ingredients, boil rice, reduce heat and cook for 30 minutes.
- Fluff and set aside.
For Broccoli
- Combine broccoli ingredients and bake in oven on 375 for 15-20 minutes.
Everything Else
- Blend vinaigrette ingredients and put to the side.
- Combine rice, broccoli, and toppings with vinaigrette. Serve and enjoy!
