I bet you’re wondering wth this post is going to be about. I mean, you probably clicked because you love adobo. Or maybe you’ve had enough of all those other quinoa salads and you know that my recipes usually include lots and lots of garlic.
Well, if you fit in with all the above. You’re in luck and you guessed right. There’s lots of garlic all up in here. And if you’re anything like me, that’s a good thing.
I have to start with adobo. Growing up in a Mexican household, we put that on everything! That’s what made any meal a Mexican meal. However, a while back I did something no one in my family had thought to do – I turned that beautiful yellow adobo container I learned to love and looked up the ingredients on the back.
I couldn’t believe my eyes. From preservative after preservative to all sorts of different name varieties for msg, that ingredient section changed my perspective on what it means to cook a Mexican meal.
And I’m so glad I did. I learned that by switching to real ingredients, my food could actually taste better. It wasn’t going to be my brain tricking me into thinking that it tasted good (so long, msg!)
One day as I was going through the grocery store I came across something that made me stop in my tracks. Simply Organic Adobo Seasoning. Could it be? As I grabbed that little glass container I crossed my fingers that the ingredient list would be short, sweet, and real. And it was!
I felt like I needed to put it on, well, everything. But first, quinoa. Enter Adobo Green Bean Quinoa Salad.
This isn’t your ordinary salad. First of all, there is no lettuce – only quinoa serves as the base. As you’ll notice, each component of this salad is cooked or prepared separately as to maximize on each layer’s own flavors. The strategy behind this is that if each is prepared with care and with attention to spices, when you put them together those strategically paired flavors dance in your mouth in perfect harmony.
It’s important to pair this recipe off as follows:
- Green beans, onions, garlic, and cherry tomatoes
- Quinoa, tomato sauce, garlic, salt

Description

Ingredients
Green Beans
- 7 oz green beans
- 1 tsp avocado oil
- 2 pinches sea salt
- 1 pinch black pepper (or to taste)
Black Beans
- 4.5 oz black beans (cooked or canned)
- 1/8 tsp sea salt
- 1/8 tsp cumin
- 1/4 tsp adobo spice
Quinoa
- 20 oz filtered water
- 1–1/3 cup quinoa
- 1 tsp adobo spice
- 1/8 tsp black pepper
- 1/8 tsp sea salt
- 1 tbsp tomato paste
Onion Mix
- 1/4 onion (cut into thin strips)
- 1 tsp avocado oil
- 1 pinch adobo spice
Garlic Olive Oil Dressing
- 1/3 cup extra virgin olive oil
- 6 cloves garlic
- 1/8 tsp black pepper
- 1/4 tsp sea salt
- 1/16 tsp adobo spice
Instructions
- Green Bean Ingredients Instructions: Cook green beans with ingredients in its section for 5 minutes. Do not let the green beans get soggy – unless that’s your jam. Put in a bowl and set aside.
- Black Bean Ingredient Instructions: Combine all black bean ingredients in a bowl.
- Quinoa Ingredient Instructions: Cook quinoa according to package. Once it’s done cooking and while it’s still hot, add in spices and tomato paste.
- Garlic Olive Oil Ingredient Instructions: Mince garlic cloves with black pepper, sea salt, and adobo spice. Put 2/3 of the mix to the side. Take the rest of the mix and combine with the olive oil in a bowl and put to the side.
- Onion Mix Ingredient Instructions: Cook onions with oil and adobo. Add garlic and cook until both onions and garlic are soft.
- Once everything you’ve cooked has cooled, combine everything in a large bowl and enjoy! You might want to go easy on the olive oil dressing since that garlic is strong (but also very delicious).
